The NSW South Coast is an area of natural beauty, bountiful farmland, and pristine beaches fringed by the Pacific Ocean. This Exclusive Experience focuses around the beautiful South Coast destination of Milton and The Clyde River, delivering insights into this unique geography and the remarkable people.

Collette Dinnigan, interior and fashion designer, author and conservationist, with her partner Bradley Cocks, travel expert and adventurer, have spent extensive periods of time on the South Coast of NSW for the past 15 years and in this first exclusive experience share their passion for the land, ocean, the great food and excellent providores that originate from here.

Ewan McCash, third generation oyster farmer, shares his expertise around the sustainable growing and harvesting of Clyde River Oysters and teaches guests how to perfectly shuck them, paired with carefully selected vintage champagne and caviar.

Ian and Lara Puckeridge, Australian spearfishing champions, will leads a ‘participate or observe’ MasterClass in sustainable snorkelling for lobster and abalone. They also will teach guests how to catch the delicate coastal marine fish Whiting.

Guillaume Brahimi, the celebrated and awarded chef will teach guests how to prepare the catch followed by an exclusive cooking lesson and curated lunch.

Rosie Cupitt, owner of Cupitt’s Estate and cheesemaker will conclude the three day exclusive experience with a cheesemaking MasterClass at Cupitts, followed by lunch at Collette Dinnigan’s property, White House Milton.

Bannisters by the Sea hotel will accommodate all guests, including daily breakfast and dinner at the award-winning Rick Stein Restaurant.

All guests will need to organise their own transport to-and-from Bannisters by the Sea, Mollymook. During the experience, all transfers will be provided.
